Combine all marinade ingredients (soy sauce, honey, garlic, paprika, hot sauce, oil, salt) in a bowl and mix well.
Add the shrimp to the bowl and coat thoroughly with the marinade.
Cover and marinate for at least 20–30 minutes in the refrigerator.
While the shrimp is marinating, soak wooden skewers in water for 15 minutes.
Thread 4–5 shrimp onto each skewer and slightly spread them.
Preheat your grill or grill pan over medium-high heat.
Lightly brush the grill with oil and place shrimp skewers on it.
Grill for 2–3 minutes on each side until shrimp are opaque and slightly charred.
Brush with any remaining marinade for extra flavor while grilling.
Serve hot with lime wedges, dipping sauce, or over rice and roasted veggies.
