Ingredients
  

  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 2 tablespoons honey
  • 1 cup Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granola
  • 2 tablespoons shredded coconut
  • 1 tablespoon chia seeds
  • 2 mint leaves for garnish

Method
 

  1. In a small bowl, mix the berries with 1 tablespoon of honey.
  2. In another bowl, whisk together the Greek yogurt, the remaining tablespoon of honey, and vanilla extract.
  3. Layer half of the berry mixture at the bottom of a serving glass or jar.
  4. Spoon half of the yogurt mixture on top of the berries.
  5. Add a layer of granola and sprinkle with shredded coconut.
  6. Repeat the layering with the remaining berries, yogurt, granola, and coconut.
  7. Top with chia seeds and garnish with fresh mint leaves.
  8. Serve immediately, or refrigerate for a chilled and refreshing parfait.

Notes

- You can substitute Greek yogurt with plant-based yogurt for a vegan version.
- Frozen berries can be used, but be sure to thaw them first.
- Great for meal prep: layer in a mason jar and store in the fridge for up to 2 days.
